Delicious oven-roasted green beans tossed in olive oil, garlic, and Parmesan, making a healthy and flavorful side dish.
Ingredients

- 1 pound green beans, trimmed
- 2 Tbsp olive oil
- 2 large cloves garlic, minced
- Salt and pepper, to taste
- 1/2 cup Parmesan, freshly grated (parmigiano-reggiano recommended)
- Juice of 1/2 a lemon
- 1–2 Tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F and line a large baking sheet with parchment paper.
- Spread the green beans on the prepared baking sheet and drizzle with olive oil. Add the minced garlic, and season with salt and pepper.
- Toss everything until the beans are evenly coated, then arrange them in a single layer.
- Sprinkle the grated Parmesan over the top, ensuring the beans are mostly covered.
- Roast in the oven for about 20 minutes, or until the beans are just tender and the cheese is melted, slightly crispy, and golden.
- Once out of the oven, squeeze the juice of half a lemon over the beans and sprinkle with chopped parsley. Adjust seasoning with more salt and pepper if needed.
- Serve hot and enjoy!
Notes
You can substitute green beans with asparagus or Brussels sprouts for variations. For an extra kick, consider adding crushed red pepper to the garlic mix.
