Description

Delicious oven-roasted green beans tossed in olive oil, garlic, and Parmesan, making a healthy and flavorful side dish.


Ingredients

  • 1 pound green beans, trimmed
  • 2 Tbsp olive oil
  • 2 large cloves garlic, minced
  • Salt and pepper, to taste
  • 1/2 cup Parmesan, freshly grated (parmigiano-reggiano recommended)
  • Juice of 1/2 a lemon
  • 12 Tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  2. Spread the green beans on the prepared baking sheet and drizzle with olive oil. Add the minced garlic, and season with salt and pepper.
  3. Toss everything until the beans are evenly coated, then arrange them in a single layer.
  4. Sprinkle the grated Parmesan over the top, ensuring the beans are mostly covered.
  5. Roast in the oven for about 20 minutes, or until the beans are just tender and the cheese is melted, slightly crispy, and golden.
  6. Once out of the oven, squeeze the juice of half a lemon over the beans and sprinkle with chopped parsley. Adjust seasoning with more salt and pepper if needed.
  7. Serve hot and enjoy!

Notes

You can substitute green beans with asparagus or Brussels sprouts for variations. For an extra kick, consider adding crushed red pepper to the garlic mix.
