Description
A comforting combination of crispy oven-roasted potatoes and sweet caramelized onions, perfect for weeknight dinners or casual brunches.
Ingredients
Scale
- 4 large russet potatoes (peeled and diced)
- 1 large onion (thinly sliced)
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper (to taste)
- 2 tablespoons fresh parsley (chopped, optional for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, toss together the diced potatoes, sliced onion, olive oil, garlic powder, smoked paprika, dried thyme, salt, and pepper until everything is well coated.
- Pour the mixture onto a baking sheet in a single layer, ensuring you don’t overcrowd the pan.
- Bake in the oven for 30-40 minutes, flipping halfway through, until the potatoes are fork-tender and golden brown, and the onions are caramelized.
- Optionally, sprinkle with fresh chopped parsley before serving.
Notes
For a creamier texture, substitute russet potatoes with Yukon Gold or use red onions for a sharper bite. Soaking the diced potatoes for 30 minutes can enhance their crispiness.
