Instructions

- In another bowl, whisk the buttermilk, egg, and melted butter until you have a smooth mixture.

- Preheat your mini muffin pan or pancake popper maker.
- Pour the batter into each cavity or mold, filling them about 2/3 of the way. If you’re adding extras like chocolate chips or blueberries, sprinkle them on top now.
- Cook for 5-7 minutes, or until they’re golden brown and cooked through.
- Remove the poppers from the pan and serve warm with maple syrup or your favorite toppings.
