Description

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Optional: chocolate chips or fruit

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well blended.
  3. Pour the wet mixture into the dry mixture and stir gently until just combined.
  4. If desired, fold in chocolate chips or fruit into the batter.
  5. Preheat a non-stick skillet over medium heat.
  6. Drop small amounts of batter (about a tablespoon) onto the skillet, forming bite-sized pancakes.
  7. Cook until bubbles form on top, then flip and cook until golden brown, about 1-2 minutes per side.
  8. Serve warm with syrup or your favorite toppings.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or toaster oven.
