- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Optional: chocolate chips or fruit
Instructions
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until well blended.
- Pour the wet mixture into the dry mixture and stir gently until just combined.
- If desired, fold in chocolate chips or fruit into the batter.
- Preheat a non-stick skillet over medium heat.
- Drop small amounts of batter (about a tablespoon) onto the skillet, forming bite-sized pancakes.
- Cook until bubbles form on top, then flip and cook until golden brown, about 1-2 minutes per side.
- Serve warm with syrup or your favorite toppings.
Notes
Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or toaster oven.
