  • Total Time: 30 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

Delightful bite-sized pancakes that are fluffy and perfect for any occasion, customizable with various mix-ins.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Optional: chocolate chips, blueberries, or powdered sugar for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, egg, and melted butter until well mixed.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. If using optional add-ins like chocolate chips or blueberries, gently fold them into the batter.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 12-15 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Let the poppers cool slightly in the tin before gently removing them.
  9. Serve warm with a dusting of powdered sugar or drizzled with your favorite syrup.

Notes

For lighter poppers, be gentle while mixing the batter; avoid overmixing to keep them fluffy.
