Description

A delightful casserole merging fluffy pancakes and savory breakfast sausage, perfect for brunch or dinner.


Ingredients

  • 2 cups buttermilk pancake mix
  • 1 lb breakfast sausage
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup pure maple syrup
  • 2 tbsp butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a large baking dish with butter.
  2. In a skillet over medium heat, cook the breakfast sausage until it’s browned and crumbly. Drain off any excess grease.
  3. In a mixing bowl, combine the pancake mix, eggs, and milk. Stir until just mixed—it’s okay if there are lumps!
  4. Fold in half of the maple syrup and some of the browned sausage bits into the batter.
  5. Pour half of the pancake batter into the greased baking dish. Layer the remaining sausage on top, followed by the rest of the batter.
  6. Bake uncovered for 30-35 minutes, or until the casserole is golden brown and springy to touch.

Notes

Best served warm drizzled with additional maple syrup or alongside fresh fruits. Can store leftovers in the fridge for up to 3 days or freeze for later.
