Description
A flavorful and easy weeknight dinner with marinated chicken, vibrant vegetables, and crispy potatoes cooked on a single pan.

- 1 1/2 lb chicken breast (about 3–4 pieces)
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1/3 cup grated Parmesan cheese
- 1/3 cup breadcrumbs (Italian or plain; add a teaspoon of Italian seasoning for plain)
- 1/2 teaspoon cracked pepper
- 1/2 – 3/4 teaspoon sea salt
- 2 lb red potatoes, cut into bite-sized pieces
- 1 – 2 garlic cloves, minced
- 2 tablespoons grated Parmesan cheese
- Salt and pepper to taste
- 1 lb fresh green beans, ends trimmed
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 tablespoon Parmesan cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F and line a sheet pan with parchment paper.
- In a medium bowl, toss together all ingredients for the potatoes until well coated.
- Spread the potatoes on one-third of the pan and bake for about 10-15 minutes.
- While the potatoes are cooking, combine all chicken ingredients in the same bowl used for potatoes and coat the chicken well.
- After the initial baking time, remove the pan with the potatoes and add the coated chicken.
- Prepare the green beans by tossing them with olive oil, minced garlic, and Parmesan (if using) along with salt and pepper.
- Add the green beans to the pan and return everything to the oven.
- Bake for about 25 minutes until the chicken reaches an internal temperature of 165°F. Broil for an additional 4-5 minutes if desired.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
For extra flavor, marinate the chicken beforehand. Use gluten-free breadcrumbs if needed.
