Description

A quick and satisfying sheet pan dinner featuring crispy Parmesan crusted chicken breasts, roasted potatoes, and fresh green beans, all cooked together for easy cleanup.


Ingredients

  • 1 1/2 lb chicken breasts (about 34 pieces, approx. 1 inch thick)
  • 2 T olive oil (extra virgin recommended)
  • 2 garlic cloves, minced
  • 1/3 c grated Parmesan cheese
  • 1/3 c breadcrumbs (Italian or plain)
  • 1/2 tsp cracked pepper
  • 1/23/4 tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced
  • 2 T olive oil
  • 2 T grated Parmesan
  • Salt and pepper to taste
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil
  • 1 garlic clove, minced
  • 1 T Parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare your sheet pan by lining it with parchment paper or spraying it with cooking oil.
  3. In a medium bowl, combine potato ingredients (red potatoes, oil, garlic, Parmesan, salt, and pepper). Stir to coat.
  4. Spread the potatoes onto one-third of the baking sheet and roast for about 10-15 minutes.
  5. In the same bowl, toss together chicken ingredients (chicken breasts, olive oil, garlic, Parmesan, breadcrumbs, pepper, and salt).
  6. Remove the potatoes from the oven, add the chicken to the sheet, and return everything to the oven.
  7. In a separate bowl, toss green beans with oil, garlic, salt, and pepper, then add them to the sheet pan after the chicken has been in for about 10 minutes.
  8. Bake for 25 minutes or until chicken reaches an internal temperature of 165°F. Optionally, switch to broil for 4-5 minutes for a crispy finish.
  9. Let the pan cool for a few minutes before serving.

Notes

You can substitute skin-on chicken thighs for richer flavor or swap red potatoes for sweet potatoes. For extra flavor, marinate the chicken in olive oil, minced garlic, and Parmesan for an hour before baking.
