Ingredients

  • 1 ½ lb chicken breast (about 34 pieces, approx. 1 inch thick)
  • 2 tablespoons olive oil (divided)
  • 45 garlic cloves, minced (2 for chicken, 12 for potatoes, and 1 for green beans)
  • ⅓ cup grated Parmesan (plus 2 tablespoons for potatoes and 1 tablespoon optional for green beans)
  • ⅓ cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning for plain)
  • ½¾ teaspoon sea salt (to taste)
  • ½ teaspoon cracked pepper
  • 2 lbs red potatoes, cut into bite-sized pieces
  • 1 lb fresh green beans, ends trimmed

Instructions

  1. Preheat your oven to 425°F and line a sheet pan with parchment paper or spray with cooking oil for easy cleanup.
  2. Combine 1 tablespoon of olive oil, minced garlic (for potatoes), Parmesan, salt, and pepper in a medium bowl. Add cut potatoes and toss to coat well.
  3. Spread potatoes on one third of the sheet pan and roast in the oven for 10-15 minutes for a golden finish (extend to 20 minutes if you love crispy potatoes).
  4. While the potatoes are cooking, mix the remaining olive oil, garlic, Parmesan, breadcrumbs, salt, and pepper in the same bowl. Coat chicken breasts well with this mixture.
  5. Add the chicken to the pan with the potatoes, and let bake until the internal temperature of the chicken reaches 165°F, approximately 25 minutes.
  6. For crispy potatoes, you can broil for an additional 4-5 minutes.
  7. In the last stages, prep the green beans by tossing them with olive oil, minced garlic, and optional Parmesan. Add this to the pan for a final 8-10 minutes of roasting until they’re bright green and tender.
  8. Remove from the oven, let cool briefly, and serve.

Notes

For added flavor, marinate the chicken in olive oil and minced garlic for a couple of hours beforehand. Use panko breadcrumbs for extra crunch.
