Parmesan Crusted Chicken Sheet Pan Dinner

Description

A delightful sheet pan dinner featuring savory chicken, tender potatoes, and crisp green beans, all roasted to perfection.


Ingredients

  • 1 1/2 lb chicken breast (34 pieces; approx. 1 inch thick)
  • 2 T olive oil for chicken coating
  • 2 garlic cloves, minced for chicken + 12 more for potatoes and beans
  • 1/3 c grated parmesan for chicken + 2 T for potatoes + 1 T for beans (optional)
  • 1/3 c breadcrumbs (Italian or plain; add 1 tsp Italian seasoning for plain)
  • 1/2 tsp cracked pepper for seasoning
  • 1/23/4 tsp sea salt for chicken + additional for potatoes and beans
  • 2 lb red potatoes, cut into bite-sized pieces
  • 1 lb green beans, ends trimmed
  • 4 T total extra olive oil for various ingredients

Instructions

  1. Preheat your oven to 425°F and line a sheet pan with parchment paper.
  2. Combine the cut red potatoes with 2 T olive oil, minced garlic (1 clove), 2 T parmesan, and salt and pepper to taste. Spread the potato mixture on 1/3 of the sheet pan and roast for 10-15 minutes.
  3. Mix the chicken breast pieces with 2 T olive oil, garlic (2 cloves), 1/3 c parmesan, breadcrumbs, cracked pepper, and sea salt in the same bowl.
  4. Add the chicken to the remaining space on the pan after the potatoes have partially roasted.
  5. Toss the fresh green beans with 1 T olive oil, minced garlic (1 clove), salt, and pepper. Add them to the pan.
  6. Bake for approximately 25 minutes, or until the chicken reaches an internal temperature of 165°F.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days. For longer storage, freeze in a freezer-safe container for up to three months.
