  • 1/3 cup breadcrumbs (Italian or plain with 1 tsp Italian seasoning)
  • 1/2 teaspoon cracked pepper

  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 garlic cloves, minced (for potatoes)
  • 2 tablespoons olive oil (for potatoes)
  • 2 tablespoons grated Parmesan cheese (for potatoes)

  • 1 lb fresh green beans, trimmed
  • 1 tablespoon olive oil (for green beans)
  • 1 garlic clove, minced (for green beans)
  • 1 tablespoon Parmesan cheese (optional, for green beans)

Instructions

  1. Preheat your oven to 425°F. Line a sheet pan with parchment paper or spray with cooking oil.
  2. In a medium bowl, combine the potato ingredients and toss until well-coated. Spread potatoes on one-third of the pan.
  3. Bake the potatoes for about 10-15 minutes, or until crispy.
  4. While the potatoes cook, mix the chicken ingredients until well coated.
  5. Add the chicken to the pan next to the potatoes.
  6. Toss the green beans in a bowl with their ingredients and add them to the pan.
  7. Return to the oven and bake for an additional 25 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. For extra crispy potatoes, switch the oven to broil high for 4-5 minutes, if desired.
  9. Remove from the oven and cool for a few minutes before serving.

Notes

Feel free to swap in different vegetables based on your preferences, such as Brussels sprouts or asparagus. Use a meat thermometer to ensure chicken is cooked properly.
