  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the peanut butter, brown sugar, and granulated sugar until smooth and creamy.
  3. Add the egg and vanilla extract, combining until fully integrated.
  4. Stir in the baking soda and brownie mix until just combined.
  5. Fold in the chocolate chips if using.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are set and the center is still soft.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to finish cooling.

Notes

You can swap out regular peanut butter for crunchy peanut butter for added texture. Store in an airtight container for up to a week.
