Instructions
- Preheat your oven to 350°F (175°C).
- Mix the peanut butter, brown sugar, and granulated sugar until smooth and creamy.
- Add the egg and vanilla extract, combining until fully integrated.
- Stir in the baking soda and brownie mix until just combined.
- Fold in the chocolate chips if using.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and the center is still soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to finish cooling.
Notes
You can swap out regular peanut butter for crunchy peanut butter for added texture. Store in an airtight container for up to a week.
