- 1 cup oat flour
- 1/2 cup peanut butter (creamy or crunchy)
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a bowl, mix together the oat flour, baking powder, and salt.
- In another bowl, combine the peanut butter, honey (or maple syrup), Greek yogurt, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 20-25 minutes or until the edges are golden and the top is crackled.
- Allow to cool before cutting into bars.
