A savory and hearty pepper steak made effortlessly in a Crock Pot, combining tender beef and fresh bell peppers.
Ingredients

- 1 pound beef sirloin, sliced into thin strips
- 1 bell pepper, sliced (any color preferred)
- 1 onion, sliced
- 1 cup beef broth
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- Salt to taste
Instructions
- In your Crock Pot, combine the sliced beef, bell pepper, onion, beef broth, soy sauce, garlic powder, and pepper. Stir until everything is well mixed.
- Cover the Crock Pot and set it to cook on low for 6-7 hours or on high for 3-4 hours. The beef should be tender when ready.
- About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry. Stir this into the Crock Pot to thicken the sauce.
- A little before you serve, season with salt to your liking.
- Enjoy your dish while it’s warm!
Notes
For added depth of flavor, consider searing the beef strips before adding them to the Crock Pot. This dish can also be doubled for meal prep throughout the week.
