Description

A flavorful and succulent roasted chicken marinated with garlic, paprika, and cumin, perfect for family gatherings or weeknight dinners.


Ingredients

  • 1 whole chicken
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine minced garlic, olive oil, red wine vinegar, paprika, cumin, salt, and pepper to create a marinade.
  2. Rub the marinade generously all over the chicken, making sure to get under the skin as well for maximum flavor.
  3. Cover and let the chicken marinate in the refrigerator for at least 1 hour, but ideally overnight.
  4. Preheat your oven to 400°F (200°C).
  5. Place the marinated chicken in a roasting pan.
  6. Roast for about 1 hour or until the internal temperature reaches 165°F (74°C).
  7. Once cooked, remove from the oven and let it rest for 10 minutes before serving. Garnish with fresh cilantro.

Notes

Marinate overnight for the best flavor. Baste during roasting for extra crispiness.
