  • 1 bell pepper (sliced)
  • 1 onion (sliced)
  • 2 cups mushrooms (sliced)
  • 2 cups spinach (or other leafy greens)
  • 1 cup shredded cheese (such as provolone or cheddar)
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)

Instructions

  1. Begin by heating olive oil in a large skillet over medium-high heat.
  2. Add the thinly sliced steak to the skillet and cook it until browned, which takes about 3-4 minutes.
  3. Once browned, push the steak to one side of the skillet.
  4. Introduce the sliced bell pepper, onion, and mushrooms to the pan. Sauté these until they’re tender, approximately 5-7 minutes.
  5. Stir the cooked steak back into the vegetable mixture.
  6. Take the fresh spinach and toss it in, cooking until just wilted.
  7. Season the entire dish with salt and pepper to your liking.
  8. Sprinkle the shredded cheese on top and cover the skillet with a lid until the cheese melts.
