Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice (white or brown)
  • 1 cup chicken broth
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Sauté the chopped onion and bell pepper until softened.
  3. Add minced garlic and cook for one more minute.
  4. Cook the seasoned chicken breasts in the pan until browned on both sides.
  5. Combine rice, chicken broth, pineapple chunks, and soy sauce in the pan.
  6. Simmer by bringing to a boil, then reducing heat to low, covering and cooking for about 20 minutes until rice is tender and chicken is cooked through.
  7. Serve and enjoy!

Notes

For a healthier option, swap chicken for tofu or use brown rice. Store leftovers in an airtight container for up to three days or freeze for up to three months.
