- 1 lb boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned)
- 1 cup rice (white or brown)
- 1 cup chicken broth
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Olive oil
Instructions
- Heat the olive oil in a large pan over medium heat.
- Sauté the chopped onion and bell pepper until softened.
- Add minced garlic and cook for one more minute.
- Cook the seasoned chicken breasts in the pan until browned on both sides.
- Combine rice, chicken broth, pineapple chunks, and soy sauce in the pan.
- Simmer by bringing to a boil, then reducing heat to low, covering and cooking for about 20 minutes until rice is tender and chicken is cooked through.
- Serve and enjoy!
Notes
For a healthier option, swap chicken for tofu or use brown rice. Store leftovers in an airtight container for up to three days or freeze for up to three months.
