Description

A quick and budget-friendly one-pan dish that combines succulent chicken, juicy pineapple, and fluffy rice for a delightful meal.


Ingredients

  • 1 lb Chicken Breast (or chicken thighs)
  • 2 tbsp Olive or Sesame Oil
  • 2 cloves Garlic (minced)
  • 1/2 cup Soy Sauce (low sodium preferred)
  • 1/3 cup Pineapple Juice
  • 2 tbsp Honey or Brown Sugar
  • 1 tbsp Rice Vinegar or Apple Cider Vinegar
  • 1 tsp Cornstarch mixed with 1 tbsp of water
  • 1 tbsp Water
  • 1.5 cups Cooked Rice (white, brown, or jasmine)
  • 1 cup Pineapple Chunks (fresh or canned)
  • 1/2 Red Bell Pepper (diced)
  • 1/4 cup Green Onions (chopped)
  • Sesame seeds (for garnish)
  • Crushed red pepper (optional)

Instructions

  1. Heat the olive or sesame oil in a large pan over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the chicken breast pieces (or thighs) and cook until browned and cooked through, about 5-7 minutes.
  4. In a separate bowl, whisk together the soy sauce, pineapple juice, honey (or brown sugar), rice vinegar, and cornstarch mixture.
  5. Pour the sauce over the chicken in the pan, stirring to coat.
  6. Add the cooked rice, pineapple chunks, and diced bell pepper, and mix well.
  7. Allow the mixture to simmer for 3-5 minutes so the flavors meld together.
  8. Top with chopped green onions and sesame seeds before serving.

Notes

This dish can be served with a side salad or steamed vegetables. Pairs well with lime or fresh cilantro.
