Description
A vibrant blend of grilled chicken and sweet pineapple for a tropical twist on classic tacos, perfect for warm-weather gatherings.
Ingredients
Scale
- 2 Chicken breasts (boneless, skinless)
- 2 tbsp Taco seasoning (store-bought or homemade)
- 1 cup Fresh pineapple, chopped
- 4 Tortillas (corn or flour)
- 1 Red onion, sliced
- 1/4 cup Cilantro, chopped
- 1 Lime, cut into wedges (for serving)
Instructions
- Preheat the grill: Get your grill heated to medium-high so it’s ready to go.
- Season the chicken: Rub taco seasoning evenly over the chicken breasts.
- Grill the chicken: Place the chicken on the grill. Cook for 6-7 minutes on each side until fully cooked through.
- Let it rest: Remove the chicken from the grill and allow it to rest for a few minutes before slicing.
- Combine your filling: In a large bowl, mix the sliced chicken with chopped pineapple, red onion, and cilantro.
- Warm the tortillas: Toss the tortillas on the grill for about 30 seconds per side to warm them up.
- Assemble and serve: Fill each tortilla with the chicken mixture and serve them with lime wedges on the side.
Notes
For extra tenderness, marinate the chicken in the taco seasoning for an hour before grilling. Feel free to customize by using fruits like mango or peaches.
