- 2 cups grilled chicken, diced
- 1 cup fresh pineapple, diced
- 1 red onion, thinly sliced
- 1 bell pepper, thinly sliced (red or yellow)
- 1 avocado, sliced
- 1 cup corn tortillas
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- Grill the chicken until fully cooked, about 7-10 minutes, then dice it into bite-sized pieces.
- On the grill, lightly char the pineapple, onion, and bell pepper for around 2-3 minutes.
- Warm the corn tortillas on the grill for about 30 seconds on each side until they’re pliable and slightly toasted.
- Assemble your tacos by placing a generous amount of chicken, grilled pineapple, onion, and bell pepper in each tortilla.
- Top with avocado slices, a sprinkle of fresh cilantro, a squeeze of lime juice, and season with salt and pepper to taste.
- Serve immediately and savor the flavors!
