Ingredients

  • 2 cups grilled chicken, diced
  • 1 cup fresh pineapple, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, thinly sliced (red or yellow)
  • 1 avocado, sliced
  • 1 cup corn tortillas
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the chicken until fully cooked, about 7-10 minutes, then dice it into bite-sized pieces.
  3. On the grill, lightly char the pineapple, onion, and bell pepper for around 2-3 minutes.
  4. Warm the corn tortillas on the grill for about 30 seconds on each side until they’re pliable and slightly toasted.
  5. Assemble your tacos by placing a generous amount of chicken, grilled pineapple, onion, and bell pepper in each tortilla.
  6. Top with avocado slices, a sprinkle of fresh cilantro, a squeeze of lime juice, and season with salt and pepper to taste.
  7. Serve immediately and savor the flavors!

Notes
