- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1/2 cup crushed pineapple (drained)
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs, one at a time, mixing well after each addition.
- Fold in the drained crushed pineapple and vanilla extract into the butter-sugar mixture.
- In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared cake pan, smoothing the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for a few minutes, then transfer it to a wire rack to cool completely.
- Serve as is or top with whipped cream and additional pineapple.
Notes
For healthier options, substitute all-purpose flour with whole wheat flour or use coconut oil in place of butter. Store leftovers in an airtight container for up to three days at room temperature, or refrigerate for a week.
