Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 (14.5 oz) cans chicken broth
  • 1 (7 oz) can diced green chilies
  • 1 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp coriander
  • 1/4 tsp cayenne
  • Salt and black pepper, to taste
  • 1 (8 oz) Neufchatel cheese, cubed (or cream cheese)
  • 1 1/4 cups corn (fresh or frozen)
  • 2 (15 oz) cans cannellini beans
  • 2 1/2 cups cooked shredded chicken
  • 1 tbsp lime juice
  • 2 tbsp cilantro

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Sauté the diced onion until it softens, about 3-4 minutes, then add the minced garlic and cook for another minute.
  3. Pour in the chicken broth and diced green chilies. Stir in the cumin, paprika, oregano, coriander, cayenne, salt, and black pepper.
  4. Let it simmer for 15 minutes to allow flavors to develop.
  5. For a thicker chili, mash 1 cup of beans with 1/4 cup broth and set aside.
  6. Stir in the cubed Neufchatel cheese until melted and creamy. Add corn, mashed beans, and the remaining whole beans.
  7. Incorporate the shredded chicken, lime juice, and cilantro, stirring until heated through.
  8. Serve hot, garnished with your favorite toppings.

Notes
