Ingredients

- 3 eggs
- 60g (approx. 2 oz) reduced-fat cheese, grated
- 1 tbsp passata (about 15g)
- A few slices of salami (approx. 20g)
- Mixed herbs for garnish
Instructions
- Melt the cheese base in a non-stick frying pan over medium heat, spreading half the grated cheese evenly until melted and crisp.
- Whisk the eggs in a bowl until smooth.
- Pour the egg mixture over the melted cheese and cover. Cook until the base is firm and golden.
- Carefully flip the egg-cheese base with a spatula.
- Spread passata over the cooked side, add salami slices, and top with remaining cheese. Cover until cheese melts and toppings heat through.
- Slide the Pizza Eggs onto a plate, sprinkle with mixed herbs, and serve immediately.
Notes
Feel free to adjust the cheese or swap the salami for another protein. For added flavor, experiment with different herbs and toppings.
