Description

A cozy breakfast dish combining the comforting flavors of pizza with a fluffy egg base, topped with salami and tomato sauce.


Ingredients

  • 3 eggs
  • 60g (approx. 2 oz) reduced-fat cheese, grated
  • 1 tbsp passata (about 15g)
  • A few slices of salami (approx. 20g)
  • Mixed herbs for garnish

Instructions

  1. Melt the cheese base in a non-stick frying pan over medium heat, spreading half the grated cheese evenly until melted and crisp.
  2. Whisk the eggs in a bowl until smooth.
  3. Pour the egg mixture over the melted cheese and cover. Cook until the base is firm and golden.
  4. Carefully flip the egg-cheese base with a spatula.
  5. Spread passata over the cooked side, add salami slices, and top with remaining cheese. Cover until cheese melts and toppings heat through.
  6. Slide the Pizza Eggs onto a plate, sprinkle with mixed herbs, and serve immediately.

Notes

Feel free to adjust the cheese or swap the salami for another protein. For added flavor, experiment with different herbs and toppings.
