Instructions
- In a large pot, heat the olive oil over medium heat.
- Once hot, add the diced carrots, celery, and bell peppers. Sauté them for about 5 minutes until they start to soften.
- Stir in the diced tomatoes, vegetable broth, garlic powder, and onion powder.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, allowing the flavors to meld beautifully.
- Add the spinach during the last 5 minutes of cooking.
- Season with salt and pepper to taste.
