Description

Delicious, homemade pretzel bites that are soft, chewy, and topped with a salty crust, perfect for snacks or appetizers.


Ingredients

  • 4 ½ cups all-purpose flour (spooned and leveled; plus more if needed)
  • 1 tablespoon sugar
  • 2 ¼ teaspoons instant yeast
  • 1 teaspoon salt
  • 1 ¾ cups warm milk (or water; around 110°F)
  • 2 tablespoons melted butter
  • 9 cups water
  • ½ cup baking soda
  • 1 large egg (mixed with 1 tablespoon of water)

Instructions

  1. In a stand mixer bowl, combine the flour, sugar, yeast, warm milk, melted butter, and salt.
  2. Using a dough hook, mix on medium speed for about 4-5 minutes until a smooth dough forms. If too sticky, gradually add more flour.
  3. Cover the bowl with a damp cloth and let the dough rise in a warm place for 30-60 minutes until it has doubled in size.
  4. Preheat your oven to 450°F and line two baking sheets with parchment paper.
  5. In a large pot, bring the water and baking soda to a boil.
  6. Divide the dough into 12 equal pieces. Roll each piece into a ¾-inch rope and cut into bite-sized pieces (1-2 inches).
  7. Drop the bites into the boiling water for 30 seconds, then transfer them to the prepared baking sheets, spacing them slightly apart.
  8. Brush the bites with the egg wash and sprinkle with coarse salt.
  9. Bake for 12-14 minutes until golden brown.

Notes

Store cooled pretzel bites in an airtight container at room temperature for up to two days or freeze for three months.
