- 4 ½ cups all-purpose flour (spooned and leveled; plus more if needed)
- 1 tablespoon sugar
- 2 ¼ teaspoons instant yeast
- 1 teaspoon salt
- 1 ¾ cups warm milk (or water; around 110°F)
- 2 tablespoons melted butter
- 9 cups water
- ½ cup baking soda
- 1 large egg (mixed with 1 tablespoon of water)
Instructions
- Prepare the dough: In a stand mixer, combine the flour, sugar, yeast, warm milk, melted butter, and salt. Mix using a dough hook on medium speed for around 4-5 minutes, until a smooth dough forms.
- Let it rise: Cover the bowl and let the dough rise in a warm spot for 30-60 minutes, or until it doubles in size.
- Preheat your oven to 450°F. Prepare two baking sheets by lining them with parchment paper.
- Boil the water: Bring 9 cups of water mixed with the baking soda to a boil in a large pot.
- Shape the pretzel bites: Divide the dough into 12 pieces. Roll each piece into a ¾-inch rope and cut into 1-2 inch bites.
- Boil the bites: Carefully drop the bites into the boiling water for 30 seconds, then transfer them to the baking sheets, leaving space between each one.
- Egg wash: Brush the bites with the egg wash and sprinkle them with salt.
- Bake: Place in the oven and bake for 12-14 minutes or until golden brown.
- Serve: Let them cool slightly before serving with honey mustard.
Notes
Store in an airtight container at room temperature for up to two days. Freeze for longer storage and reheat in a 350°F oven for 10-15 minutes.
