Description

A warming and hearty dish that combines Italian sausage, black beans, and pumpkin for a nutritious meal perfect for chilly nights.


Ingredients

  • 1 lb Italian sausage
  • 1 can black beans, drained and rinsed
  • 1 can fire-roasted tomatoes
  • 1 cup pumpkin puree
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. In a large pot, heat a couple of tablespoons of olive oil over medium heat.
  2. Add the diced onion and minced garlic to the pot. Sauté until softened, about 3-5 minutes.
  3. Add the Italian sausage and cook until browned, breaking it apart as it cooks.
  4. Stir in the chili powder, cumin, salt, and pepper. Cook for another minute.
  5. Add the black beans, fire-roasted tomatoes, pumpkin puree, and broth to the pot.
  6. Bring the mixture to a simmer. Once it simmers, reduce the heat and cook for 20-30 minutes, stirring occasionally.
  7. Taste the chili and adjust the seasonings as needed.
  8. Serve hot, topped with optional ingredients like sour cream, shredded cheese, or cilantro.

Notes

Customize the spice level and add extra veggies for more flavor. Letting the chili rest improves its taste.
