Ingredients

  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Mix in the pumpkin puree, egg, and vanilla extract until smooth.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips (and nuts if using).
  7. Drop spoonfuls of the dough onto the prepared baking sheets.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Let the cookies cool on wire racks before serving.
