- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tsp ground cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground cloves
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 cup pumpkin puree
- 1 large egg
- 2 tsp vanilla extract
- 2 cups semi-sweet chocolate chips
- Optional: 1/2 cup chopped pecans or walnuts
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Mix in the pumpkin puree, egg, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients, stirring until just combined.
- Fold in the chocolate chips (and nuts if using).
- Drop spoonfuls of the dough onto the prepared baking sheets.
- Bake for 10-12 minutes or until the edges are set.
- Let the cookies cool on wire racks before serving.
Notes
Store cookies in an airtight container at room temperature for up to a week or freeze for longer storage.
