Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs and pumpkin puree until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the oats and nuts, if using.
- Drop spoonfuls of the dough onto a lined baking sheet, pressing down slightly to flatten.
- For the crumble topping, mix together additional oats, flour, and butter until crumbly. Sprinkle this mixture over each cookie.
- Bake for 12-15 minutes or until the edges turn golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
