  • 1 cup butter, softened
  • 2 eggs
  • 2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs and pumpkin puree until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Stir in the oats and nuts, if using.
  7. Drop spoonfuls of the dough onto a lined baking sheet, pressing down slightly to flatten.
  8. For the crumble topping, mix together additional oats, flour, and butter until crumbly. Sprinkle this mixture over each cookie.
  9. Bake for 12-15 minutes or until the edges turn golden.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
