Description

A creamy and indulgent pumpkin cream cold foam that pairs perfectly with cold brew coffee, perfect for fall mornings.


Ingredients

Scale
  • 1/4 cup milk of choice (unsweetened almond, oat, skim, or cashew)
  • 2 tbsp pumpkin purée (not pumpkin pie filling)
  • 12 tsp maple syrup or sweetener of choice (stevia or monk fruit)
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract
  • Optional: a pinch of cinnamon for dusting
  • 1/2 cup coarsely ground coffee
  • 2 cups cold water

Instructions

  1. Combine the coarsely ground coffee and cold water in a jar or French press. Let it steep in the fridge for 12 to 18 hours, then strain it.
  2. In a blender, blend together the unsweetened milk, pumpkin purée, sweetener, pumpkin pie spice, and vanilla extract until frothy. This should take about 15 to 20 seconds.
  3. Fill a tall glass with ice and pour in the freshly made cold brew.
  4. Spoon the pumpkin foam generously over the coffee.
  5. Finish with a sprinkle of cinnamon on top if desired.

Notes

You can store the pumpkin foam in an airtight container in the refrigerator for up to 2 days. Cold brew can be prepared in larger batches and stored in the fridge for up to a week.
