Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and mix well.
- In a separate bowl, whisk together the flour, salt, baking powder, and pumpkin pie spice.
- Gradually combine the dry ingredients with the wet ingredients until well mixed.
- Scoop about 1 tablespoon of the dough, flatten it slightly, and place a small spoonful of pumpkin pie filling in the center.
- Encase the filling with the dough, rolling it into a ball.
- Arrange the dough balls on a lined baking sheet with space between each.
- Bake for 12 to 15 minutes or until the edges turn golden brown.
- Allow cookies to cool slightly before transferring to a wire rack.
Notes
