Instructions

  2. Cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the vanilla extract and mix well.
  4. In a separate bowl, whisk together the flour, salt, baking powder, and pumpkin pie spice.
  5. Gradually combine the dry ingredients with the wet ingredients until well mixed.
  6. Scoop about 1 tablespoon of the dough, flatten it slightly, and place a small spoonful of pumpkin pie filling in the center.
  7. Encase the filling with the dough, rolling it into a ball.
  8. Arrange the dough balls on a lined baking sheet with space between each.
