Description

A delicious tart combining the warm flavors of pumpkin, creamy ricotta, and sweet caramelized onions, perfect for any occasion.


Ingredients

  • 1 pie crust
  • 2 cups pumpkin puree
  • 1 cup ricotta cheese
  • 1 onion, thinly sliced
  • 4 slices bacon, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons fresh sage, chopped
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and set aside, leaving the bacon fat.
  3. In the same skillet, add olive oil and thinly sliced onions. Cook for 10-15 minutes until caramelized.
  4. While the onions cook, mix pumpkin puree, ricotta cheese, chopped sage, salt, and pepper in a bowl until well combined.
  5. Roll out your pie crust and fit it into a tart pan.
  6. Spread the pumpkin mixture evenly over the crust.
  7. Top with the caramelized onions and crispy bacon.
  8. Brush the edges of the crust with the beaten egg for a shiny finish.
  9. Bake for 30-35 minutes or until the tart is golden brown and set.
  10. Allow to cool slightly before slicing and serving.

Notes

For a gluten-free version, substitute the pie crust with gluten-free crust or phyllo dough. Add a pinch of nutmeg or cinnamon to enhance sweetness.
