- 1 pie crust
- 2 cups pumpkin puree
- 1 cup ricotta cheese
- 1 onion, thinly sliced
- 4 slices bacon, chopped
- 2 tablespoons olive oil
- 2 tablespoons fresh sage, chopped
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, cook the chopped bacon until it’s crispy. Once done, remove the bacon and set it aside.
- In the same skillet, add olive oil and thinly sliced onions. Cook for about 10-15 minutes until the onions are caramelized.
- While the onions are cooking, mix pumpkin puree, ricotta cheese, chopped sage, salt, and pepper in a bowl until well combined.
- Roll out your pie crust and fit it into a tart pan.
- Spread the pumpkin mixture evenly over the crust.
- Top with the caramelized onions and crispy bacon.
- Brush the edges of the crust with the beaten egg for a shiny finish.
- Bake for 30-35 minutes or until the tart is golden brown and set.
- Once finished, let it cool slightly before slicing and serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze individual slices wrapped tightly.
