A creamy and savory dip that combines pumpkin with feta cheese, perfect for fall gatherings.


Ingredients

  • 8 oz block of feta cheese, drained from brine
  • 1/4 cup plain Greek yogurt
  • 1 cup canned pumpkin puree (unsweetened)
  • 12 Tbsp honey (adjust to taste)
  • 1 tsp dried thyme (or 2 tsp fresh thyme)
  • Black pepper (freshly cracked)
  • Fresh thyme for garnish
  • Chopped walnuts (optional)
  • Extra honey for drizzling
  • Crusty toasted bread or crackers for serving

Instructions

  1. In a food processor, add the drained feta cheese and Greek yogurt. Blend until smooth, scraping down the sides as needed.
  2. Incorporate pumpkin puree, honey, thyme, and black pepper into the food processor. Blend until well combined.
  3. Cover the whipped feta dip and refrigerate for 30 to 60 minutes.
  4. Once chilled, transfer the dip to a serving bowl. Garnish with walnuts, fresh thyme, honey, and more black pepper if desired.
  5. Serve with crusty toasted bread or an assortment of crackers for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-5 days. Stir well before serving.
