Ingredients

- 8 oz block of feta cheese, drained from brine
- 1/4 cup plain Greek yogurt
- 1 cup canned pumpkin puree (unsweetened)
- 1–2 Tbsp honey (plus more, to serve)
- 1 tsp dried thyme (or 2 tsp fresh thyme)
- Black pepper (freshly cracked)
- Chopped walnuts (optional; raw or toasted)
- Crusty, toasted bread (like sourdough or baguette)
- Crackers
Instructions
- Add the drained feta cheese and Greek yogurt to a food processor. Blend until smooth.
- Add the pumpkin puree, honey, dried thyme, and black pepper to the food processor. Blend again until combined.
- Transfer the mixture to a bowl, cover, and chill in the refrigerator for 30-60 minutes.
- Serve in a large bowl, garnished with walnuts, fresh thyme, and honey drizzle. Enjoy with crusty bread or crackers.
Notes
For extra richness, add more Greek yogurt or a splash of heavy cream. Can use fresh herbs or adjust sweetness to personal taste.
