  • Total Time: 65 minutes
  • Yield: 8 servings 1x
  • Diet: Vegetarian

Description

Indulge in layers of soft bread, creamy egg custard, and juicy blueberries with this easy-to-make casserole. Perfect for brunch or breakfast-for-dinner nights.

Ingredients

Scale
  • 1 loaf of bread (challah or brioche recommended)
  • 2 cups fresh blueberries
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing)
  • Powdered sugar (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your casserole dish with butter.
  2. Cut the bread into cubes and layer half of it in the base of the dish.
  3. Sprinkle half of the blueberries over the bread layer.
  4. In a bowl, whisk together the eggs, milk, sugar, vanilla, cinnamon, and salt. Pour half of this mixture over the bread and blueberries.
  5. Repeat the layering with the remaining bread and blueberries, then pour the rest of the egg mixture on top.
  6. Gently press down to allow the bread to soak up the liquid.
  7. Let it sit for 15-20 minutes to absorb, then bake for 40-45 minutes until golden brown and set.
  8. Serve warm, dusted with powdered sugar if desired.

Notes

For best results, use day-old bread and consider soaking the mixture overnight for more flavor.
