- 1 loaf of bread (preferably brioche or challah)
- 2 cups fresh blueberries
- 6 large eggs
- 2 cups milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- Butter (for greasing the baking dish)
- Powdered sugar (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
- Cut the bread into cubes and layer half of the cubes at the bottom of the prepared dish. Sprinkle half of the blueberries on top.
- In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined. Pour half of this mixture over the initial layer of bread and blueberries.
- Layer the remaining bread cubes and blueberries, then pour the rest of the egg mixture on top, ensuring even coverage.
- Allow the casserole to sit for about 30 minutes, giving it time to soak up the mixture.
- Bake for 45-50 minutes until golden brown and set in the center.
- Let it cool slightly before serving and dust with powdered sugar if desired.
Notes
For a healthier alternative, consider using almond milk and whole-grain bread. Allow leftovers to cool and store in an airtight container for up to 3 days.
