  • 1 cup Whole Milk
  • ⅔ cup Guinness (or any beer of your choice)
  • 1 cup Shredded Sharp Cheddar
  • ½ cup Shredded Swiss
  • 1 cup Shredded Monterey Jack
  • Pretzel Bites, Tortilla Chips, or Veggies for serving

Instructions

  1. Melt butter in a saucepan over medium heat.
  2. Add flour and minced garlic. Sauté for 1 minute.
  3. Incorporate seasonings (cayenne pepper, onion powder, smoked paprika) and the spicy brown mustard.
  4. Slowly pour in the milk and Guinness, whisking continuously.
  5. Cook until thickened and bubbling, stirring frequently.
  6. Reduce heat to low and fold in the shredded cheeses until melted and creamy.
  7. Serve immediately with your favorite dippers.
