- 1 cup Whole Milk
- ⅔ cup Guinness (or any beer of your choice)

- 1 cup Shredded Monterey Jack

Instructions
- Melt butter in a saucepan over medium heat.
- Add flour and minced garlic. Sauté for 1 minute.
- Incorporate seasonings (cayenne pepper, onion powder, smoked paprika) and the spicy brown mustard.
- Slowly pour in the milk and Guinness, whisking continuously.
- Cook until thickened and bubbling, stirring frequently.
- Reduce heat to low and fold in the shredded cheeses until melted and creamy.
- Serve immediately with your favorite dippers.
