Description

Delicious chicken skewers marinated in ranch dressing, garlic, and parmesan cheese, perfect for grilling.


Ingredients

  • 1/2 cup ranch dressing
  • 1/4 cup finely grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice (optional)
  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, cubed
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together ranch dressing, parmesan cheese, olive oil, garlic, and parsley. Add black pepper, garlic powder, and lemon juice.
  2. Marinate cubed chicken in the mixture for at least 30 minutes or up to 2 hours.
  3. Soak wooden skewers in water for 15 minutes.
  4. Thread chicken onto skewers, leaving space between pieces.
  5. Preheat grill to medium-high and grill skewers for 10-15 minutes, turning occasionally, until cooked through (internal temperature of 165°F / 75°C).

Notes

For extra flavor, marinate chicken overnight. You can also use shrimp or vegetables instead of chicken.
