- 2 sheets puff pastry (store-bought)
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
Instructions
- Preheat the oven according to the puff pastry package instructions.
- Roll out the puff pastry sheets on a lightly floured surface and cut into 3×5 inch rectangles.
- Arrange the rectangles on a baking sheet and bake until golden and crisp, about 15-20 minutes.
- While the pastry cools, whip the heavy cream in a mixing bowl. Add powdered sugar and vanilla extract, and beat until stiff peaks form.
- Once the pastry is cool, layer one rectangle with whipped cream and fresh raspberries.
- Top with another pastry rectangle and dust with powdered sugar just before serving.
Notes
Best served fresh and can be stored in an airtight container in the refrigerator for up to two days.
