Description

A comforting bowl of rich, creamy potato bacon soup with crispy bacon, hearty potatoes, and a velvety cream base, perfect for chilly evenings.


Ingredients

  • 4 slices bacon (unsalted preferable)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 medium potatoes, diced (Yukon gold or russet)
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • Salt and pepper, to taste
  • Chives or parsley, for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, keeping the drippings in the pot.
  2. Add the chopped onion and minced garlic to the drippings and sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced potatoes and pour in the chicken broth. Bring to a boil.
  4. Once boiling, reduce heat and simmer until the potatoes are tender, approximately 15 minutes.
  5. Blend the soup to your desired consistency, using an immersion blender.
  6. Stir in the heavy cream and season with salt and pepper to taste.
  7. Serve warm, garnished with crispy bacon bits and chopped chives or parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half or use coconut milk for a dairy-free option.
