- 4 slices bacon (unsalted preferable)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 medium potatoes, diced (Yukon gold or russet)
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half for a lighter version)
- Salt and pepper, to taste
- Chives or parsley, for garnish
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, keeping the drippings in the pot.
- Add the chopped onion and minced garlic to the drippings and sauté until the onion is translucent, about 3-4 minutes.
- Stir in the diced potatoes and pour in the chicken broth. Bring to a boil.
- Once boiling, reduce heat and simmer until the potatoes are tender, approximately 15 minutes.
- Blend the soup to your desired consistency, using an immersion blender.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve warm, garnished with crispy bacon bits and chopped chives or parsley.

For a lighter version, substitute heavy cream with half-and-half or use coconut milk for a dairy-free option.
