- 1–2 jalapeños, deseeded and minced
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
Instructions
- Combine the diced tomatoes, chopped onion, minced jalapeños, and chopped cilantro in a medium bowl.
- Squeeze the lime juice over the mixture.
- Season with salt to taste, and mix everything together until well combined.
- Allow the Rooster’s Beak to sit for at least 15 minutes before serving.
- Serve with tacos, burritos, nachos, or crispy chips for dipping!
