A quick and hearty rotisserie chicken broccoli pasta dish that’s perfect for busy weeknights.

- 1 rotisserie chicken, shredded
- 8 oz pasta (penne or fusilli work best)
- 2 cups broccoli florets
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Start by cooking the pasta according to package instructions. In the last 3 minutes, add the broccoli florets. Drain once done and set aside.
- Heat olive oil in a large skillet over medium heat. Sauté the minced garlic for about 1 minute until fragrant.
- Add the shredded rotisserie chicken to the skillet. Stir until warmed through.
- Pour in the heavy cream and bring everything to a slight simmer. Stir in the grated Parmesan cheese until it’s melted and well combined.
- Toss the drained pasta and steamed broccoli into the skillet, mixing everything until it’s evenly coated in the creamy sauce.
- Season with salt and pepper to taste. Serve warm and enjoy!
Notes
Serve with a fresh garden salad or garlic bread. Add chopped parsley or extra Parmesan on top before serving for freshness.
