Description

A quick and hearty rotisserie chicken broccoli pasta dish that’s perfect for busy weeknights.


Ingredients

  • 1 rotisserie chicken, shredded
  • 8 oz pasta (penne or fusilli work best)
  • 2 cups broccoli florets
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Start by cooking the pasta according to package instructions. In the last 3 minutes, add the broccoli florets. Drain once done and set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté the minced garlic for about 1 minute until fragrant.
  3. Add the shredded rotisserie chicken to the skillet. Stir until warmed through.
  4. Pour in the heavy cream and bring everything to a slight simmer. Stir in the grated Parmesan cheese until it’s melted and well combined.
  5. Toss the drained pasta and steamed broccoli into the skillet, mixing everything until it’s evenly coated in the creamy sauce.
  6. Season with salt and pepper to taste. Serve warm and enjoy!

Notes

Serve with a fresh garden salad or garlic bread. Add chopped parsley or extra Parmesan on top before serving for freshness.
