A simple and therapeutic recipe for baking a crusty, golden Rustic French Bread Loaf at home.
Ingredients

- 410 grams all-purpose flour
- 1 teaspoon granulated sugar
- 1 teaspoon fine salt
- 1.5 teaspoons active dry yeast
- 300 milliliters warm water (about 38 – 46 °C)
Instructions
- In a mixing bowl, combine the active dry yeast, warm water, and sugar. Allow the mixture to rest for 5 minutes until foamy.
- Mix in half of the flour and the salt. Knead on medium-low speed, gradually adding remaining flour until sticky.
- Transfer dough to a floured bowl and cover with a towel. Let rise for 2 hours or until doubled in size.
- Place risen dough on a floured surface, shape into a ball, dust with flour, and cover with a bowl. Let rise for another 30 minutes.
- Preheat oven to 220 °C and place a Dutch oven inside to heat for 20 minutes.
- Score the dough, transfer it to the Dutch oven, and bake covered for 30 minutes. Remove lid and bake for an additional 10 minutes until golden brown.
- Ensure the internal temperature reaches approximately 99 °C before removing from the oven.
- Transfer bread to a wire rack to cool completely before slicing.
Notes
For crusty bread, ensure your water is at the right temperature when activating yeast, and cool bread completely on a wire rack before slicing.
