- 4 chicken breasts
- 1 cup cream cheese, softened
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the softened cream cheese, chopped spinach, shredded mozzarella, garlic powder, onion powder, and a pinch of salt and pepper in a mixing bowl. Mix well until combined.
- Cut a pocket into each chicken breast, ensuring not to slice all the way through.
- Stuff each breast evenly with the prepared cheese and spinach mixture.
- Heat olive oil in a skillet over medium heat. Sear each stuffed chicken breast for 3-4 minutes on each side until they’re golden brown.
- Transfer them to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
- Let it rest for a few minutes before serving.
Notes
Feel free to use low-fat cream cheese or substitute with a dairy-free alternative if desired.
