- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 2 cups fresh spinach, chopped
- 1 tsp garlic powder
- 1 cup shredded mozzarella cheese
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp fresh lemon juice
- ¼ cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully cut pockets into each chicken breast.
- In a mixing bowl, combine cream cheese, spinach, mozzarella, garlic powder, and Italian seasoning until well mixed.
- Stuff each chicken pocket with the creamy mixture and secure openings with toothpicks.
- Heat olive oil in an oven-safe skillet over medium heat and sear each stuffed chicken breast for about 3–4 minutes on each side until golden brown.
- Pour chicken broth around the chicken and drizzle with lemon juice.
- Bake uncovered in the oven for approximately 25–30 minutes or until the internal temperature reaches 165°F (75°C).
- Sprinkle grated Parmesan cheese over the chicken and allow to rest for about 5 minutes before serving.
Notes
Serve with garlic mashed potatoes or a green salad. Extra lemon juice can add a zesty kick.
