S’mores Brownies

Description

Rich, fudgy brownies topped with gooey marshmallows and a delicious cookie crust, capturing the flavors of classic s’mores.


Ingredients

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder (for crust)
  • ½ cup sugar (for crust)
  • ½ cup softened butter (for crust)
  • 1 large egg (for crust)
  • 1 teaspoon vanilla extract (for crust)
  • ½ cup unsweetened cocoa powder (for brownie layer)
  • 2 cups powdered sugar (for brownie layer)
  • ½ cup melted butter (for brownie layer)
  • 4 large eggs (for brownie layer)
  • 1 teaspoon vanilla extract (for brownie layer)
  • 1 cup mini marshmallows (for topping)
  • 1 cup graham cracker crumbs (for topping)
  • Optional: chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish by greasing it or lining it with parchment paper.
  3. Mix the cookie crust ingredients together in a bowl until fully combined. Spread evenly in the prepared baking dish.
  4. Bake the cookie crust for 12 minutes until set and a little firm.
  5. Whisk together the brownie ingredients in another bowl until smooth.
  6. Pour the brownie batter over the baked cookie crust, smoothing it gently.
  7. Bake for an additional 25 minutes, or until a toothpick inserted comes out with moist crumbs.
  8. Remove from the oven and sprinkle mini marshmallows and graham cracker crumbs on top. If adding chocolate chips, sprinkle them in now too.
  9. Bake for another 5 minutes until marshmallows are golden.
  10. Allow to cool before slicing into squares.

Notes

Serve warm with vanilla ice cream or drizzled with caramel sauce. Store at room temperature for up to 3 days, in the fridge for up to a week, or freeze for up to 3 months.
