Description

A delightful and quick version of classic focaccia bread, made with active sourdough starter, perfect for any occasion.


Ingredients

  • 500g Bread Flour
  • 350ml Water
  • 100g Active Sourdough Starter
  • 10g Salt
  • Olive Oil
  • Fresh Rosemary
  • Sea Salt

Instructions

  1. In a large mixing bowl, combine 500g bread flour, 350ml water, and 100g active sourdough starter. Mix until a shaggy dough forms.
  2. Allow the dough to rest for 30 minutes.
  3. Add 10g salt to the dough and knead for about 10 minutes until smooth and elastic.
  4. Grease a bowl and place the kneaded dough inside. Cover and let rise for 3-4 hours, stretching and folding every hour.
  5. Preheat your oven to 220°C (428°F).
  6. Transfer the risen dough to a greased baking tray and gently spread it out.
  7. Dimple the surface with your fingers, drizzle with olive oil, and garnish with rosemary and sea salt.
  8. Bake for 20-25 minutes or until golden brown.
  9. Let it cool slightly on a wire rack before slicing.

Notes

For an extra crispy crust, place a shallow pan filled with water in the oven during baking. High-protein bread flour is recommended for better rise.
