Ingredients

- 1 lb sausage (Italian or your choice)
- 4 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1 teaspoon thyme (optional)
- 1 cup chopped kale or spinach (optional)
Instructions
- In a large pot, brown the sausage over medium heat until fully cooked. Remove and set aside.
- In the same pot, add the chopped onion and garlic, and sauté until translucent.
- Add the diced potatoes to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
- Stir in the cooked sausage and heavy cream.
- Season with salt, pepper, and thyme. Add kale or spinach if using and cook for an additional 5 minutes.
- Serve warm and enjoy!

For added flavor, serve with crusty bread and garnish with fresh herbs or grated cheese.
