Description

Warm and comforting Sausage Potato Soup featuring Italian sausage, tender potatoes, and aromatic herbs, perfect for chilly days.


Ingredients

Scale
  • 1 lb sausage (Italian or your choice)
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)
  • 1 cup chopped kale or spinach (optional)

Instructions

  1. In a large pot, brown the sausage over medium heat until fully cooked. Remove and set aside.
  2. In the same pot, add the chopped onion and garlic, and sauté until translucent.
  3. Add the diced potatoes to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  4. Stir in the cooked sausage and heavy cream.
  5. Season with salt, pepper, and thyme. Add kale or spinach if using and cook for an additional 5 minutes.
  6. Serve warm and enjoy!

Notes

For added flavor, serve with crusty bread and garnish with fresh herbs or grated cheese.
