 - 1 onion, chopped
 - 2 cloves garlic, minced
 - 6 cups chicken broth
 - 1 package (9 oz) cheese tortellini
 - 2 cups fresh spinach
 - 1 can (14.5 oz) diced tomatoes
 - 1 tsp Italian seasoning
 - Salt and pepper to taste
 - Grated Parmesan cheese for serving
 
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned. Drain excess grease.
 - Add onion and garlic, cooking until softened.
 - Pour in chicken broth and bring to a simmer.
 - Stir in tortellini and cook according to package instructions.
 - Add diced tomatoes, spinach, Italian seasoning, salt, and pepper.
 - Simmer until spinach is wilted.
 - Serve hot, topped with grated Parmesan cheese.
